Cooking for the Boys

Shopping, preparing and cooking for my family is really frustrating for me. I do not like it at all.  So I am reaching out via this blog post to anyone of you that have good, easy recipes so I can feed my family and not hate it. Travis is a vegetarian so that’s a challenge but I am open to advice and suggestions.  To all you moms out there that have the cooking thing down reach out to me. I NEED YOU!

  1. If you don’t have a bread machine, buy one. Make sure it has a “dough” selection on it. They come with recipes and should have a Pizza dough recipe. You make it ahead of time, the machine makes the dough – roll it out and throw whatever you like on it. Small cans of tomato sauce work for sauce and just buy all the veggies your husband likes and put them on one side – put what you like on the other. A crock pot is great for cooking pork roasts, whole chickens, etc. You can use the broth to make chicken & rice or to cook noodles in. You can make chicken salad with the chicken. You can put BBQ sauce on the pork or chicken and warm canned green beans to go with. Google quick and easy recipes with the main food you want to use or cook that day. Blessings!

      • I have a Panasonic that does all I need. If you search Panasonic bread machine, you get a site that provides the best deals. I found it for a little over $100. That’s a good deal for this one. I’ve had mine over 10 years never had a problem and use it regularly! One more thought about the shopping and cooking. Not sure what your husband’s schedule is, but if there are occasions that you can cook or prepare meals together, it helps. It makes me feel like my husband respects the time, work and thought that I put into it if he is in the kitchen with me. Our kids (11 & 9) have even learned over the years and want to be in the kitchen with us to help. Best to you! We’re lovin’ your music!!

    Seriously though I’m a single mom who works full time and attends classes fulltime at night so dinners are challenging. I always try to have flour tortillias and shredded cheese in the fridge. These are always great for a quick and easy quesidillia meal. My 7 yr old loves it anytime and you can doctor it up with left over chicken, pizza sauce, or sauted veges like onions/peppers for Dad. Add some fresh cut up fruit along with crunchy veges like carrots, celery and you have hit all the food groups. BTW, I was at the Single Moms event tonight at WFBC. You guys were so awesome what a blessing you were to all of us, I’m going to try to do the retreat in spring, if I don’t have finals. Thank you for the laughs, music and love!

  3. I love to cook, I just don’t want to cook everyday.

    When I was married I would cook casseroles. You can make some veggie ones http://www.ehow.com/how_2302615_make-tasty-veggie-casseroles.html. Then freeze them in individual portions. Then your food doesn’t go bad and if you want a salad :D , Travis can still have some home cooking.

    If you do this with several meals and Travis feels like a veggie casserole and you feel like something different. You can still sit down for a home cooked dinner and each of you gets to eat what you want.

    Oh, and when I have lots of company I make a breakfast casserole the night before everyone comes the next day everyone gets a very filling breakfast. Usually takes 15 minutes to prepare and then bake morning of for 45 minutes.

    Overall, you spend much less time in the kitchen. Always have meals they do not always all have to be frozen.

  4. This won’t help Travis, but if it’s ever just you and the boys this is really good and easy. I’m a single mom and really hate to cook but we can’t go out to eat all the time! Melt one stick of butter in a frying pan. Add Worcestershire (yes, I had to get the bottle out to spell it) sauce – a good bit, no measurement – and garlic salt, no measurement. Cut into bite-sized pieces boneless, skinless chicken breast. Place pieces in pan covering with more w sauce. Cook until chicken is done. I will usually make a couple of vegetables, crescent rolls and especially mashed potatoes (country crock or ore ida steamed are ok) and pour the sauce in the pan over the potatoes. For another easy chicken recipe, you can mix honey bbq sauce with worcestershire sauce (no measurement again, just not too thick and not too runny) and brush it on both sides of boneless, skinless chicken breasts. Cook until done.

  5. Here’s a quick easy for you and the boys that is GREAT for lunch the next day cold!
    Take some boneless skinless chicken breasts, coat with spicy brown mustard, and crushed cornflakes. Bake at 350 for about 35-40 minutes (until done). Serve with steamed veggies and any other sides you like. The next day, have it for lunch right out of the fridge.

    For all of you, this is a quick easy and YUMMY vegetarian dish:
    Diced Roma tomatoes (6-7)
    2 cloves minced garlic (or find a Publix or Bi-Lo and buy the garlic paste in the produce section-no mincing! Add about 2 tsp)
    1/2 tsp salt
    1/4 tsp pepper
    1 tsp basil (you can also get this in the tube with the garlic if you want- tastes super fresh)
    1/4 cup EVOO
    1 box Penne Pasta

    Add all your stuff together in a bowl while your pasta is boiling and let it “hang out” till the pasta is done to your liking. Drain pasta and toss in Roma Tomato mixture.
    Throw some Cole’s garlic bread from the freezer section in the oven for 5 minutes and you have a full meal that makes great leftovers.
